Healthy Snacks and Desserts Featuring Okinowan Sweet Potatoes and Millet (gluten free!)
In this class we will explore quick and easy ways to create healthy “Grab n go” snacks: baked sweet potatoes dressed with coconut oil; dates stuffed with a variety of fillings; and rice/nori wraps with: veggies, pesto dip, & goat cheese
Healthy Desserts can also be used for healthy snacking or to spruce up a simple dinner: mashed purple sweet potatoes in a no-bake Okinowan Sweet Potato Pie with raw crust; Baked millet pudding, and a recipe for “spiritual food for the body” from Edgar Cayce. We will discuss the health benefits of the purple sweet potato (high contents of anthocyanin – the purple pigment) and millet (one of the most digestible and non-allergenic grains available, and it is one of the few grains that is alkalizing to the body).
